Gluten Free Blueberry Coconut Waffles

As our house starts to smell of sweet coconut and warm coffee, I can hear little footsteps climbing out of bed, to greet that delicious sweet smell that just woke them from their sleep. Seeing their lovely, beautiful little faces as they enter the kitchen. Their eyes squinting to the light that haven't yet adjusted, and their hair undecided in which direction it wants to lay, is my most favorite moment in these rare mornings together.



Ingredients:
1 cup coconut flour
1/2 cup potato starch (NOT Potato Flour)
1/4 cup tapioca flour
2 teaspoons baking powder
1 teaspoon sea salt
1/4 cupolive oil or grape seed oil
2 eggs or egg substitute
1 1/2 cupscoconut milk
1 teaspoon agave   

Directions:

1. Mix all ingredients together with a whisk, and pour into waffle iron, in batches.
2. If mixture seems thick add more milk or a bit runny add some more coconut flour.
3.Enjoy!

Toni, these look delicious, as do the coconut pineapple muffins. But I just don't have most of these ingredients on hand and imagine it would be a fortune to buy them all. Can you get them in small quantities at a place like Sprouts?

Yes you can buy a lot of these ingredients at sprouts that make them more cost effective :)
