Zucchini Coconut Soup

Nothing like a cup of warm soup on a cold day! Here's a simple recipe thats quick, easy, and healthy- deliciousness!

What you'll need:
1 yellow onion, roughly chopped
2 garlic cloves, roughly chopped
2 large zucchinis, cut into 1/2 inch-thick circles
1 yellow squash, cut the same as zucchini
1 bay leaf (fresh or dried)
Water
2 tablespoons of coconut oil
2 cups chopped cauliflower
1 cup unsweetened coconut milk
Sea salt, and pepper to taste

What you'll do:
First: In a Large pot over medium-high heat, melt the coconut oil. Once the oil is warm toss in the onion, garlic and zucchini for about 3-5 minutes. Add the bay leaf and just enough water to cover the vegetables. Cover the pot and bring to a gentle boil. Add the cauliflower and continue to cook until it becomes soft. 
Second: Once the vegetables are all soft, remove the pot from the heat and pour all the ingredients into a high speed blender (you may have to do it in batches if in a regular blender) blend it all together until the mixture is creamy. Then add the coconut milk and a blend it quickly.
Third: Once the mixture is complete and creamy transfer it back to the original soup pot and season it was salt and pepper to taste.

Basil Hemp seed Pesto

Sometimes just having a good and healthy condiment on hand can make a difference in snacks and meals. Today we made our almond meal crackers for snack and paired it with this fresh basil sauce.  It's filling, delicious, and guilt free! 

You'll Need:
1/2 cup hemp seeds
1 Garlic clove
1/2 cup fresh basil leaves
1/4 cup of Olive Oil
1 medium lemon
Dash of sea salt and pepper to taste
What you do:
Place hemp seeds, garlic, and basil into a food processor and pulse until its finely chopped and combined. 
Add in the lemon juice, salt and pepper. Keep processing it as you drizzle olive oil into it.


Serve with cracks, salads, meats, and fish! It's always fun to explore the many possibilities that this delicious pesto pairs with!
