Pantry Goodies

And had frozen ones too. Being a little under the weather can really put a glitch in my daily routine. I had no energy to look up great Gluten Free recipes, let alone go to the store to buy the ingredients necessary.

While opening the refrigerator door and cupboard repeatedly, as if something were going to reappear when I opened it again; I figured why not use the things I already do have and create a delicious meal for dinner? Scavenging through every shelf I came up with these ingredients:

-3 lbs of Boneless Chicken Breast (thawed)
-Red Onion (chopped in quarters)
-Garlic Head (slice in half)
-Bush of Thyme
-1 Lemon sliced in half
-1tbsp of Olive Oil
-2 tomatoes chopped
-1tsp of salt
-1/4tsp of ground pepper
-Rice or any side of your choice





I grabbed the slow cooker out because I knew I had to work later in the evening and it would be ready by six o'clock just in time for Wade to feed them dinner.

In the slow cooker:
1. Added about 1tbsp of olive oil
2. Added the cut onion and garlic
3. After rubbing some sea salt and ground pepper on chicken breast I then added that to the slow cooker
4. Added a bush of Thyme and the lemon
5. Add a 1/3 cup of water

I cooked it on low for 6-8 hours and served it over rice or if you have Quinoa.

Best Part of Me.

They made me expierence a new love that is so strong it hurts. They drive me to be a better person so I have the tools to guide them to become great women. They have taught me patience and understanding. They influence me in the most positive way. They are my gifts from above. They are my heros. They couldn't have come into my life at a better time, I believe there is a plan for all of us and they are a BIG part of mine and I can't wait to begin this journey with them :)


Love her little cupcake crumbs on her face ;) To be a kid....

Those eyes inspire me everyday to keep going and doing my best!

Baked Chicken Meatballs- Gluten Free


What you'll need...
1 cup zucchini, chopped (about 1 zucchini)
1 cup carrots, chopped (about 2 carrots)
½ cup parsley, coarsely chopped
3 medium cloves garlic
¼ cup blanched almond flour
1 egg
1 pound boneless skinless chicken breasts
1 teaspoon celtic sea salt
½ teaspoon ground pepper
¼ teaspoon chili powder

1.Preheat oven to 350°
2.In a food processor, pulse together the zucchini, carrots, parsley and garlic
3.Add almond flour, egg, and chicken
4.Then add salt, pepper and chili powder and process until thoroughly combined
5.Drop tablespoon sized balls of the chicken mixture onto a parchment lined baking sheet
6.Bake meatballs for 20 to 25 minutes





I served ours over some homemade pasta sauce and Quinoa noodles. Girls loved every bite.
